
Blueberry Cobbler
Ingredients
- 1/3 cup ghee
- 1 3/4 cup almond flour
- 1/4 cup monkfruit and erythriole mixture
- 1 teaspoon baking powder
- 1/4 teaspoon sea salt
- 1 egg
Stuffed
- 1 cup blueberries

1 cup strawberries
- 2 teaspoons monkfruit-erythritol mixture
- 1/4 teaspoon xanthan gum
- 1 teaspoon vanilla *optional
- 1 teaspoon cinnamon *optional
- Zest 1 lemon *optional
Process
- Mix the ghee (it should be at room temperature), with the monke fruit. Add the egg and mix completely.
- In a bowl, stir the remaining solids: almond flour, baking powder, sea salt.
- Gradually add the solids to the liquid mixture.
- Integrate everything, divide the mixture in half. Make two balls and stretch the dough with the help of a rolling pin and waxed paper.
- Once the two bases have been stretched, put them in the freezer for about 10 minutes.
- While you wait, mix all the ingredients in a bowl.
- You can add cinnamon, lemon zest or vanilla to give it more flavor.
- Take the dough out of the freezer and, with the help of a round cutter or knife, give it the appropriate size to cut the base and lid.
- Place the base of the dough on your saucepan, covering the walls, now fill with the prepared red fruit mixture and cover with the other part of the dough.
- Bake at 180ºC for around 20-25 minutes
