Ingredients
1/2 cup oat flour
1 cup almond flour
2 eggs
1/2 monk fruit
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp mix of spices (cinnamon, cloves, cadamom)
1/3 cup mashed sweet potato
1 tsp vanilla
1/4 Greek yogurt s/a
Process
In a bowl mix dry ingredients.
In another bowl, mix wet ingredients and bring both mixtures together until integrated.
Transfer to a cake pan lined with waxed paper, place nuts (optional) and bake at 350ºF for 45-50 minutes.
Decorate with a Greek yogurt glaze with stevia.
